Chicken Satay Bowl

This is an easy peanut satay chicken recipe that doesn't require much effort or ingredients. The peanut satay sauce is so tasty and filling, and add's a nice hit of flavour and healthy fats to jazz up what would otherwise be quite a boring meal! The sauce is made from some of my pantry staples - which include peanut butter, sesame oil, tamari, and honey. Hope you like it :). Kim xx

Yields4 Servings

 600 g Chicken breast
 1 cup rice (brown or white)
 1 bunch of kale
Peanut Satay Sauce
 2 cloves of garlic
 3 heaped tbs of peanut butter
 1 tbs liquid honey
 1 tbsp tamari sauce
 Pepper
 Juice of half a lemon
 1 tbsp Sesame Oil

Pre-heat oven to 200 degree's. Slice the chicken into small strips and set aside.

Combine all peanut satay sauce incredients. Separate half the mixture into a different bowl and use it to marinate the chicken.

Add the marinated chicken onto a tray, spray or drizzle with olive oil and place in the oven. Leave to cook for 25mins.

Add one cup of rice with two cups of water in a sauce pan and to bring to boil on the stove. Cook for 10-15mins or until all the water is evaporated (stir occasionally to stop the rice sticking).

Or alternatively use a rice cooker.

To cook the kale, head 1tbs of oil in a non-stick pan. Pull the leaves from the stalk, add ~3-4 cups or kale leaves to the pan. Toss through with added salt and chilli flakes untill soft.

Once chicken is cooked, serve all componants together (rice, satay chicken, and kale), and top with extra peanut satay sauce.
