Homemade Lamb Koftas with Tabouli

This lamb kofta recipe is a delicious, and easy homemade middle eastern dish. It literally tastes like the takeaway open kebabs! As a nutritionist, I find working my way through the cuisines of different countries helps with my inspiration and variety. As humans, we love variety, and I encourage you to keep mixing it up. (Get off the "diet" food!). I hope you enjoy this - it has lots of good flavours, is satisfying and makes great leftovers. Enjoy!

Yields4 Servings
Protein
 500-600g Lamb Mince (raw)
Vegetables
 4 tomatoes
 1 cup chopped parsley
 0.50 red onion
 1 white onion
 0.50 Cucumber
Healthy Fats
 1 tub of Lisas Hummus
 1 tub of tzatziki (Yoghurt cucumber dip)
 4 tbsp olive oil
Carbohydrate
 1 cup Brown rice or pearl barley
Other
 0.50 Lemon (juice)
 1 tbsp Ground Cumin
To make the tabouli

Combine diced tomatoes, cucumber, red onion, and finely chopped parsley in a bowl. Add 1-2tbs of olive, juice of 1/2 a lemon, and salt to taste.

To make the rice/pearl barley

Add 1 cup of rice/barley and 2 cups of water and bring to boil. Stir occasionally so that nothing sticks to the bottom.

To make the lamb koftas:

Add finely chopped onion, and 1tbs of ground cumin to the mince in a medium bowl, and massage through well with clean hands.

Heat olive oil in a pan. Then mould mince into mini patties (1/2 palm sized) using your hands, and pan fry for ~5mins each side in the fry pan. (Add extra oil as needed).

Serve patties/koftas, tabouli, and rice/pearl barley with a tub of hummus and tzatziki on the side.
