It's perfectly balanced, and it's also relatively cheap. Your most welcome to use a nacho packet mix from the supermarket instead of my spice combo, but I find it's just as quick and easy to add your own spices, and it saves you from ingesting any extra additives you might not want from packets. Japanese Pork RamenBy Kimberley BellJapanese Pork Ramen anyone? With the Covid-19 lockdown, we've all had to go without takeaways and something I have been really missing recently is Asian food. As much as I love a good steak and salad, there's something so glorious about a dish thats warming and bursts with flavour. Last night it was pouring down with rain, and I was having serious Asian food cravings and so my partner and I decided to give Japanese Ramen a go. You never really know what's going to happen when you make a new recipe. But I'm happy to say, I think we nailed this one first time. So here it is for you to try too! You can modify this recipe based on your own food preferences: For example, opt for rice noodles, not udon noodles if you are gluten-free. Swap pork for tofu or chicken. And you can leave out the chilli if you are sensitive to spicy food. Whatever you do, if you love Jap and soups, I'm sure you will love this. Enjoy! Kim x
Salmon and Spinach Egg MuffinsBy Kimberley BellThese Salmon and Spinach Egg muffins are super easy to make, and perfect for a "grab and go" breakfast or snack. I decided to make them after I noticed I was spending money on a similar egg muffin at the Cafe down the road. Why not just make them myself and save the $5.50? (Light bulb moment!). They are also great for those who prefer more of a savoury breakfast. Hope you love them! Kim xx P.S. DO NOT MAKE THESE IN A TIN MUFFIN TRAY! Unless it's REALLY non-stick. You will spend a gazillion hours trying to clean it later (trust me), so try and get a rubber one. The muffins come out so much easier. (Lifehack).

Chicken Bacon and Mushroom Pasta recipeCreamy Chicken Bacon and Mushroom PastaBy Kimberley BellThis creamy chicken and bacon pasta is a real winner and super comforting. It's also alot healthier than you might think ;). When I look at the health of meals, I look 2 key things: 1. Is it balanced? I.e.g does if have some carbohydrates, fats and protein and non-starchy vege to provide a nutrient-dense meal? 2. Are the ingredients unprocessed and free of inflammatory ingredients? Aside from the bacon, this recipe uses single ingredient foods and has a lovely macronutrient balance so you should feel satisfied and nourished. Yes, bacon can be quite processed depending on the brand and what is added into it. But if you check the back of packets and choose the brand with the least additives, you're probably going to be just fine. And what is life with bacon!!! I don't have bacon all the time, but I certainly don't think we need to avoid it altogether. For most people, it's totally okay in moderation (like anything really... welcome to the non-diet approach). You're going to love this classic pasta dish - enjoy! Kim xx

You can also make it after a big roast, or if you just need to get rid of some leftover vegetables in the fridge at the end of the week. You can make this high carb or low carb, dairy-free and gluten-free depending on your nutrient needs. For a lower-carb option, just add more non-starchy vegetables like carrots, parsnip, courgette, broccoli etc. and leave out the potato. Hope you love it - enjoy!
